Liquid Honey

Our honey comes mainly from the wildflowers, blueberry and clover blossoms found in the North Eastern area of our province and as such tends to have a mild flavour. We do not pasteurize our honey. During the whole process of extracting and bottling, our honey is maintained at the same temperature that you find in the beehive, 93 – 95 F. We never filter or strain our honey, allowing it to gravity settle in one of two large water jacketed stainless steel tanks, pouring off the bottom. It’s as close as you can get to eating honey straight for the hive. You can taste the difference.
