Cream:
- ½ c butter (room temp – then no mixer is needed!)
- 1 c crunchy peanut butter
- ½ c sugar
- ½ c brown sugar
Once above is smooth, stir in:
- 1 c liquid honey
- 2 eggs, beaten
In separate bowl: combine, whisk/sift to mix:
- 2 ½ c flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Add dry to wet. Place plastic wrap over dough and chill for several hours (I normally whip the dough up and let chill overnight). Drop by teaspoons on cookie sheet, crisscross with fork dipped in flour.
Bake at 375 degrees for 8-10 minutes, depending on oven.
Note: Keep dough in fridge when not working on it – makes it very easy for handling.

As we use as much local produce as possible, some of our jams, jellies, and pickles are only available when the produce is in season and until supplies last. Most of our jams are soft-set, which make them not only great for spreads, but also double as sauces.

Honey crystallizes two ways – it either becomes very granular and coarse or it becomes smooth and oh so spreadable. Our creamed honey is the smooth and spreadable variety and will not change texture over time. It will not drip from a spoon and stores well at room temperature. It can be gently warmed for a more spreadable consistency if too hard or put in the fridge to harden should it be too soft.
Creamed honey is a great altenative to creamed spreads as it is fat free.

About Freezing Liquid Honey
Many people do not realize that you can freeze liquid honey to prevent crystallization from occurring – especially if you buy in large containers and do not consume it all before it does begin to crystallize (a natural occurrence with honey).
Below are some tips for freezing honey:
Repack your honey into jars or containers that are easier for you to use in the future – after all, you don’t want to keep freezing and thawing your honey because it is too large of a container. The size of the container is entirely up to you.
We all know that honey is sticky and not all that fun to clean up when spilled. Take this into consideration when choosing your storage container. You will want to pick a container with a good seal on it to prevent spills and leaks. Glass is actually a perfect choice for this – the honey will not expand and plastic containers could become dinged or damage when you or your family is looking through your freezer.
Once frozen, honey will keep in the freezer for ever, but after approximately one year – the chance of crystallization occurring does increase.
When you are ready to use your honey, remove from the freezer and let it thaw completely – simply leave it sit at room temperature. It’s my experience that the container will “sweat” when thawing.
Don’t worry, your honey won’t taste any different. Freezing honey does not change or affect the nutritional quality of the honey in any way.

- 1/2 c butter
- 1 1/2c flour
- 1/2 c brown sugar, packed
- 1/2 tsp. salt
- 1/2 c honey
- 1 tsp. baking powder
- 1 egg, beaten
- 1/2 c chopped nuts (optional) we used walnuts
- 1 tsp. vanilla

Cream together butter, brown sugar, and honey; stir in egg and vanilla. Mix together dry ingredients and combine with butter mixture. Stir in nuts. Pour batter into a buttered 9 X 9″ pan. Bake at 350 degrees for 25 – 30 minutes; don’t overbake. Remove from oven, cut into bars, and allow to cool

Snacking can be a blessing or a curse when you’re trying to be mindful of your daily diet. Whether you’re going to work, school or just running errands, make a batch of bars at the beginning of the week and package it in individual servings. You’ll never have to reach for candy or cookies in the afternoon because you’ll never be without a delicious snack!
- 1/3 cup pure honey
- 1/4 cup butter, melted
- 3 egg whites
- 1 teaspoon cinnamon
- 1/2 teaspoon almond flavoring
- 3 cups low-fat granola
- 1/2 cup almonds, coarsely chopped
- 3/4 cup dried cherries
Preheat oven to 350°F. Whisk together honey, butter, egg whites, cinnamon and almond flavoring. Stir in granola, almonds and cherries. Spoon granola mixture into 9-inch, nonstick (or well greased) square pan. Using a piece of wax paper, firmly press granola mixture in pan. Bake 20 to 25 minutes or until lightly browned. Remove pan from oven and place on a cooling rack. Cool completely; cut into bars.
